High in tannin, very full bodied and with a rich classically bittersweet aroma it is a cider which demands time to mature and food to show its best. Blended with Sweet Coppin to lower the overall tannin level and Stoke Red to bring in pretty acidity. Fermented in neutral French oak cask, left in barrel on the spent lees to develop
